South Aus -- Apple and Cinnamon Cake (from SA 112)

  • 250 gm butter
  • 250 gm sugar
  • 3 eggs
  • 500 gm S. R. flour
  • 1 tin pie apples
  • 1/2 cup copped almonds
  • pinch salt
  • butter, sugar & cinnamon for topping
  • Cream butter and sugar, add eggs one at a time, sift in flour and salt alternately with milk.
  • Put half the mixture in a 24 x 24 greased and lined square tin.
  • Cover with apples then spread remaining cake mixture over apples, sprinkle with chopped almonds.
  • Bake at 180 degrees in the centre of oven for 45 mins or until cooked.
  • Spread with butter and sprinkle with cinnamon and sugar.
