Mocha Macadamia Cookies (NSW)

From the January 2008 NSW Newsletter.
  • 125 g. butter, chopped
  • 1 teaspoon vanilla essence
  • 1 cups firmly packed brown sugar
  • 1 egg
  • 3 teaspoons dry instant coffee
  • 1 tablespoon Tia Maria or Kahlua
  • 2 tablespoons cocoa
  • 1.5 cups plain flour
  • 1.25 cups chopped macadamias toasted
  • 1/3 cup chocolate coated coffee beans
  • Beat butter, sugar, essence and egg with combined coffee and liqueur in medium bowl with electric mixer until smooth.
  • Stir in dry ingredients and nuts.
  • Drop level tablespoons of mixture about 5 cm. apart onto greased oven trays.
  • Flatten slightly with a floured fork. Top with coffee beans.
  • Bake in moderate oven for about 15 minutes or until firm.
