NANNA ROBINSON'S SAVOURY TARTS

1 Large tin peas (undrarned), 1 Large carrot, 2 stalks celery, 1 large onion, 500g (1lb) Kraft Cheese
250g (1/2 I/lb) Bacon pieces, 500g (1lb) Tomatoes, 6 eggs
Grate cheese, carrot & Onion. Dice celery, bacon & tomatoes.
Beat 3 of the eggs, scramble the other 3. Mix altogether in a large bowl, add salt & pepper.
Line patty tins with pastry, fill with the mixture. Bake in a hot oven until set.

From the South Australian Shirleys. This recipe has been around since the 1940's. Can also be made as an open pie.


Cherry Coconut Slice

395gm condensed milk
200gm Plain Biscuits (crushed)
2 1/2 cups coconut
100 glace cherries
1/2 cup slivered almonds, toasted
125 gm Copha, melted and cooled

Lightly Grease an 18 x 28cm slice pan. Line with paper extend up 2cm above pan edge. In a large bowl, combine condensed milk crushed biscuits, coconut, cherries & almonds.
Add copha to above and MIX VERY WELL. Press into prepared pan, chill for 20 minutes until firm.
Ice with pink icing, and cut into 2cm squares. YUMMY!!

Townsville Tearaways Shirley Cake

Ingredients:
1/4 cup butter
1 egg
1 cup of plain flour
1/2 cup walnuts
1/2 cup of warm water
1 teaspoon soda
1 teaspoon baking powder
1 tablespoon syrup
1 cup chopped dates

Method:
1. Soak dates in water and soda.
2. Beat butter and sugar.
3. Add egg, dates, flour with baking soda
4. Bake 3/4 of an hour in moderate oven
5. Spread icing over cake while cake is still hot.

Icing:
Boil for 3 minutes: 1 cup brown sugar, 1 tablespoon butter, 2 tablespoons milk; then beat until thick.
