This is brilliant! I saw the apples just sitting there, and wondered what on earth to do with them. Then I thought of the bacon, the eggs and the bread. The apple sauce is savoury -- not sweet. Yes, it's rich and full of calories, but what a rush!
  • 2 slices bread
  • 2 large or 3 small eggs
  • 2 long rashers bacon
  • small amount milk
  • 1 small onion, chopped
  • 2 cooking apples, peeled, cored and chopped
  • tiny amount of cooking oil
  • salt, pepper, ground cloves to taste
  • In a small saucepan, fry the onion until caramellized in a tiny slurp of oil.
  • Add the chopped apple and a tablespoon of water.
  • Cook the apple and onion with the lid on the saucepan until the apple is soft -- mash with a wooden spoon when cooked.
  • Add salt and pepper, and if you have it, add a couple of shakes of ground cloves.
  • In a frying pan, fry the rashers of bacon.
  • Beat the eggs slightly with about 2 tablespoons of milk.
  • Soak the bread in the egg mix then fry on both sides until golden brown.
  • If there is any egg left over, pour that in and cook as well.
  • Serve up the French toast on a plate and top with the bacon. Then pour the apple sauce over the lot.
  • Be careful that the apple sauce isn't too hot -- don't burn yourself.
